Recipe: Sausage and Baked Bean Casserole

If you're a lover of beans but you're bored of the monotony of having beans on toast or a jacket potato and beans, then we've got something to spice up your bean game! Why not have a go at making this mouth-watering bean casserole as a midweek mixup? And you can easily adapt this recipe to various dietary requirements too.

1. Heat the oil over a high heat in a large casserole dish and add the sausages. Brown all over, then lift out on to a plate.

2. Add the onion and mushrooms to the empty casserole and fry for 5min or until golden and just beginning to soften. Stir in the garlic, Worcestershire sauce, and tomato puree and cook for 30sec.

3. Return the sausages to the pan, then pour in the stock. Bring to the boil, then simmer over a medium heat, stirring occasionally, for 20min, or until the liquid is thick and reduced.

4. Stir in the beans and cook for a few more min to heat through. Season to taste. Stir through the parsley and serve with crusty bread.
